This sweet and complex vinegar is made at a family-run vinegar-house in Jerez, which has been making sherry and vinegar since 1264 when Don Alfonso Valdespino was rewarded with land in Jerez, in return for fighting along side the King. Grapes have been cultivated on that land ever since, and sherry and vinegar produced is of such good quality that the Valdespino estate is the official sherry and vanguard consumed by the Royal House of Spain and also the Royal House of Sweden.

This is a cask-aged sherry vinegar, which is a blend of older and younger vinegars, which have been aged in oak barrels, infusing them with rich wood notes. You can throw a splash this stuff in light salad dressings, fish marinades, and even when poaching fruit such as cherries, plums and pears. This will quickly become your secret weapon in the kitchen!
