Beautiful lactic goats milk cheese made by folding curds that have been drained and matured over several days from different batches together, this gives a spectacular acidity and adds length to the flavour. These are fluffy and tart in the centre with a buttery breakdown on the rind.
Made with raw goat's milk and animal rennet.
