Hand harvested, carbonic maceration for 20 days (without stems) in stainless steel tanks of 5000 liters. Final fermentation
and aging 60% in 225 and 300 liter French oak and local chestnut barrels, 20% in 500 and 600L foudres and 20% in 300L amphora.
