A negotiant project, sort of.. Made from Spanish grapes farmed by the Sons of Wine team then taken by truck to Alsace to be vilifiedat  Christian Binner's winery. The grapes are crushed and briefly macerated on the skins. Fermented with wild yeasts and bottled just before fermentation completes to allow the effervescence to form in the bottle. Ripe apricot, sharp acidity and a crisp bubble. good acidity and a little
