An unrestrained foray into a bittersweet cider made with a broad selection of bittersweets (Dabinett, Yarlington Mill, Harry Masters Jersey, and Chisel Jersey with a very small amount of Browns to help feremntation) from various orchards. Made in the Rural Method this has a small amount of residual sugar helping to balance the mouthful of lovely tannin which keeps you coming back for more. Aromas are classic bittersweet fruit - spice, ripe apple, orchard floor, leather, copper. This is very drinkable but robust and slightly wild, it's great with really rich food, especially game, mutton, hard cheeses and cheesy dishes.
