Cabernet Franc is one of Philippe Delmee's specialities (another being Chenin Blanc), and he does it very well. The grapes are fermented as whole bunches with indigenous yeast in stainless steel. It is medium-bodied with notes of ripe cherries and redcurrants and has a slight fizz. A dry, subtly earthy finish that makes you reach for another glass. No filtration, fining or added sulphur.
