Riccardo Zanotto makes predominantly sparkling wines in the traditional Col Fondo method. Translated literally into English Col Fondo means 'with the bottom', meaning that the wine is unfiltered with the lees still in bottle. This gives the wine a richness and complexity often lacking from filtered frizzante wines. 

All the grapes are farmed organically or biodynamically and with the help a trusted network of neighbouring growers. Obviously unfiltered and cloudy with minimal sulphites.
