Using the traditional stilton recipe this cheese is named as a nod to the past. Joe Schneider resurrected the recipe & has been producing this raw milk stilton style cheese ever since. Hand ladled by the small team who work closely with the farmer, the cows are milked in the morning in the shed next door. This cheese is beautifully acidic with that blue punch of a stilton, crumbly and creamy its superb on a salad or a great addition to a cheese board.
