Hailing from the Langres plateau which sits nestled between Champagne and Burgundy this soft cows milk cheese is first washed in annatto to give it its distinct bright orange colour and then Marc de Bourgogne, an eau de vie made from Champagne grape skins, this adds a pleasant fruity boozy note to the finish of the cheese. Inside there is a firm middle with a gooey layer around. This cheese loves a little dousing of champagne in the middle to make a statement on a cheeseboard.
