Dried apricot and peach, orange peel, a distinctly herbal finish and medium tannin, Metonymia is a complex and elegant expression of Viognier. Mainly Viognier, with Chardonnay, Grenache Blanc & Muscat sourced from an organic grower in the Gard, Southern Rhône. The juice and skins of the Viognier macerate together for one week before being pressed off, the rest is direct-pressed - everything goes into a mixture of big old demi muid and some clay tinaja the Bonnetons have imported from Spain. Regular punchdowns give the wine a golden, sandy appearance as well as grippy tannic structure.
