Joan Rubio Ancestral 2018
The Ancestral method is an ancient technique for making sparkling wine with the second fermentation taking place in the bottles without adding any sugar or dosage to kick-start the process. The white grapes macerate for around 9 days before the wine is transfered to bottle for the first Fermentation using native yeasts. The wine sits of the lees for a over a year before being discorged by hand.
All of the Joan Rubios wines are vinified with their family’s owns grapes, all farmed biodynamically and all within 15-20km of the Mediterranean. In the cellar they practice as little intervention as possible. Only a small amount of their cuvees have sulphites added, only when needed and in very small quantities.
Aromatic with peach and citrus fruit, fine delicate bubbles, light and elegant. Unfiltered & unfined, no additional sulphites.
