Find & Foster Carter Methode Traditionelle 2018
Paying homage to the Carter family, who protected 2 acres of ancient orchard in Rewe, Deon when hundreds of acres surrounding it were grubbed up following WWII. The orchard gives us rare and unusual apple varieties dominated by fresh acidity and distinctive aromatics, including Devonshire Quarrenden, Ellisson's Orange and Cornish Pine.
Pressed on 2018, a long, slow primary fermentation took place in stainless steel followed by 18 months in bottle- (12-15 months on champagne yeast). The result is an elegant, champagne-like cider with subtle notes of pear, wet stone, green apple and sea spray.
Pairs exceptionally well with rich cheese-based dishes such as tartiflette, and seafood, particularly shellfish.
