Fresh butter, selected flours, free-range eggs, and real Bourbon vanilla beans are skillfully mixed together to form a richly flavored dough. The dough is leavened with their family's irreplaceable yeast starter which has been carefully nurtured for over 40 years.
The cakes are topped with a rich and crunchy icing made from fine "Prima Bari" almonds from Puglia, pearl sugar, and egg whites before being baked in the shape of a dove, symbolizing peace and the coming spring. The Classic Colomba has a light, soft sponge that is studded with hand-peeled, candied orange peel.
