Fattoria di Sammontana Vin Santo Del Chianti 2018
The grapes are harvested and then left to dry on racks for about 7-10 days to concentrate the sugars. They are then pressed and the juice is transferred to various small (80-100L) barrels called ‘Caratelli.’ The barrels are left untouched for a minimum of four years. During this time, natural fermentation takes place and it stops naturally. The barrels are never topped up, leading to the wine’s oxidative profile. After four years the wine is bottled unfined and unfiltered.
Bright golden yellow color. Concentrated bouquet of dried fruit, walnut husk and honey. Important structure with evident sweet note balanced by good acid freshness.
