Deboutbertin Achillee 2018
The Chenin Blanc grapes are slowly pressed, then the juice is transferred into old barrels for a slow-paced fermentation and 18 months élevage, the finished wine is bottled without fining, filtration or sulphur. Skin maceration takes 3 to 5 days. Slightly reduced on the opening, it offers a dense stone fruit, confit citrus and pear on the palate with a hint of spice. There is a great minerality for balance.
