Bodegas Cesar Florido Sherry Fino en Rama 375ml
César Florido was founded in 1887 and is currently maintained by César Florido, a fifth-generation descendant of the founder. The winery is the oldest bodega in the town of Chipiona and is one of only two bodegas that are still operating outside of the cooperative.
En rama refers specifically to the seasonal release of specially selected unfiltered fino and manzanilla – the “biologically aged” sherry, which is a paler, fresher and drier style of sherry, traditionally served with all manner of local seafood.
The grapes for this sherry are aged slowly under flor in soleras housed in the Cherra cellar, only 25 metres from the Atlantic ocean which gives this smooth wine a fresh, savoury, salty character. No fining or filtration. Only 1200 bottles made.
