Delicate semi-soft cheese made with the milk from the morning and evenings milking. Tradition was that Comte cheesemakers poured the leftover curds from the days production, this was then coated with a layer of ash to protect it and topped up with the mornings milk, this gives a subtle flavour and is now synonymous with Morbier. Perfect cheese for toasties or on its own for something not too strong.
Made with raw cow's milk and animal rennet
